Ingredients
• 1 tablespoon olive oil
• 1 onion, thinly sliced
• Kosher salt and black pepper to taste
• 1 (32 oz) container chicken broth
• 1 (15 oz) can fire-roasted diced tomatoes
• 1 lb cooked chicken breast, roughly chopped
• 1 jar Glover’s Original or HOT Smoked Salsa
• 1 (15 oz) can hominy, rinsed and drained
• 1/2 teaspoon cumin
• 2 teaspoon dried Mexican oregano
Toppings
• Shredded cabbage, diced avocado, sliced radishes, fresh cilantro, lime wedges
Instructions
1. Heat olive oil in a large pot over medium heat. Add onion, season with salt and pepper, and cook until softened — about 5 minutes.
2. Add broth, fire-roasted tomatoes and Glover’s Smoked Salsa. Stir and bring to a simmer.
3. Add chicken and hominy. Simmer 10-15 minutes until flavors come together.
4. Ladle into bowls and top with cabbage, avocado, radishes, cilantro and a squeeze of lime.
Serves 4 — pairs great with warm tortillas or a cold Modelo.
